Smoked Tuna Sushi
(Serves 4) 
This is a good starter for any occasion. The recipe is easy, the food can be made ahead of time and the flavor is a wonderful combination of western and eastern tastes.
3-4 oz (100 g) smoked tuna in thin slices
3-4 oz (100 g) smoked creamed cheese*
½ Cup (1 dl) cooked rice
Small bunch chives, chopped
2 inches (5 cm) cucumber (seedless)
2 Tbsp olive oil
1 Tbsp lemon juice
Salt and freshly ground black pepper
Small bunch radishes
Directions:
Mix the smoked creamed cheese, rice and half of the chopped chives. Season with salt and freshly ground black pepper. Slice the cucumber into thin sticks. Spread the filling over the tuna slices and place the stick of cucumber in the middle of the tuna. Roll the tuna together and place in the refrigerator for about one hour. Mix the olive oil, lemon juice and the rest of the chopped chives to well blended dressing. Season with salt and pepper and a dash of sugar. Trim and cut the radishes into long, thin slices and dip them in the dressing.
Cut the sushi into 1-inch (2-3 cm) pieces and place on a serving dish. Serve with the dressing and radishes. Serve the rest of the dressing in a small dish for dipping the sushi. You can also serve soy sauce with the sushi as well as wasabi if you like a stronger flavor.
*If you cannot find smoked creamed cheese, use regular cheese and add some of your favorite herbs and spices (including a little soy or teriyaki sauce.
