Friday Rolls
(makes 8-10 rolls)

Finish your week with delicious easy to make, Friday Rolls and enjoy the weekend!
Pancakes
130 g plain flour (approx. 200 ml)
½ tsp coars salt
200 ml milk
4 eggs
50 g melted butter
Optionally butter for frying
Directions:
Mix the flour and salt. Add the milk, eggs and melted butter, and whisk the mixture together thoroughly. Bake for about 20 minutes at 200 C/ 400 F.
Filling
50 g butter
225 g bean sprouts
225 g finely chopped white cabbage
3 medium onions (zittauer) chopped
200 g grated mild cheese
3 Tbsp soy sauce
Grated mild cheese for topping
Directions:
Melt the butter in a thick-based saucepan and fry the
vegetables gently for a few minutes, then cook with the lid on for approx.
4 mins. to soften. Cool the vegetables slightly before adding cheese and
soy sauce. Divide the filling between the pancakes, placing it in the middle
of each pancake. Roll up the pancakes and put in a greased ovenproof dish
with the joints downwards. Sprinkle the grated cheese over the pancakes and
brown in the middle of the oven.
